If you love lasagna, you are going to love my mini piononos! The best part of making my piononos is using a muffin tin! This will eliminate the process of using toothpicks to hold the piononos in place.
I should call this recipe sweet delicious bites! This recipe is filled with a delicious beef filling, eggs and cheese. The taste is so amazing and similar to a pastelon (Puerto Rican plantain lasagna). If you would like to see this video, please leave a comment below!
This recipe can be served any time of the day (breakfast, lunch, dinner) or just because! If you are looking for ideas for meal prepping, the piononos are a great protein source.

INGREDIENTS:
- 1 pound of cooked ground beef or picadillo meat
- 3 ripe plantains
- 3 eggs, lightly beaten (add some adobo for flavoring or add salt & pepper to your taste)
- 2 cups of mozzarella cheese (or a cheese of your choice)
- 1 tablespoon of Italian Seasoning
- Cooking spray or oil
INSTRUCTIONS:
- Once the meat is cooked, set it aside. (check out my picadillo video for instructions on how to make the meat filling for the piononos). https://youtu.be/hqT9GK68TD0
- Cut both ends of the plantains. Slit a line down the plantain and peel the skin. Slice the plantains horizontally into four long pieces (watch the video below for instructions on how to peel and slice plantain).
- Let’s cook the plantains! Using a large skillet, spray with cooking oil. Once the skillet is heated, start adding the plantains (you can fry the plantains with oil if you like) but I prefer to use the cooking spray. Cook until both sides of the plantains are golden brown (about 5 minutes). Set plantains aside to cool off before assembling into the muffin tin (about 10 minutes).
- It’s time to assemble the piononos! Grab the muffin tin and spray with a little cooking spray.
- Take the three eggs, crack them into a bowl, and beat gently. Add your favorite seasoning. I added some adobo from https://nutritiondork.com/?ref=62 (use code themarinatedkitchen for 10% off).
- Next, pour some of the eggs into the muffin tin (enough to cover the bottom of each muffin slot, (I used a muffin tin with 12 slots).
- After you add the egg, grab one plantain and insert it around each muffin tin. If the plantain does not fit into the muffin tin, trim the end. Also, if your plantain is too short and you have extra small pieces, go ahead and place them into the muffin tin since the egg will hold all the ingredients together (NO TOOTHPICKS NEEDED!).
- Now it’s time to add the beef filling, scoop enough to fill each plantain.
- Sprinkle mozzarella cheese on top of each piononos and add a dash of Italian seasoning.
- Preheat the oven to 350 degrees and bake for about 20 – 30 minutes until the cheese is golden brown.
- Remove from the oven and allow to cool (about 20 minutes) before removing from the muffin tin.
- Top with cilantro or avocado.
