This brightly colored shrimp ceviche is so pretty and delicious!
You are going to love the taste of the vinegar from the pique (hot sauce), garlic and lemon.

INGREDIENTS:
- 2 pounds of cooked, peeled & deveined shrimp (I use the Kirkland brand from Costco)
- 4 fresh plum tomatoes, diced
- 1 purple (red) or white onion, peeled and diced
- ½ cup of cilantro, chopped
- 1 lemon (juice only)
- 1 tablespoon of garlic paste or minced garlic
- Adobo seasoning
- Black pepper
- Salt
- 2 tablespoons of Urban Pilon Pique (this hot sauce has a unique vinegar kick!)
Check out the link below if you would like to buy the hot sauce.

INSTRUCTIONS:
- Place shrimp in a bowl, rinse and drain.
- Once drained, soak the shrimp in cold filtered water and lemon juice for approximately 20 – 30 minutes (the acid from the lemon juice will cook the shrimp and eliminate the fishy taste).
- After removing the tails, cut the shrimp into three pieces.
- Add the tomatoes, onion, cilantro and garlic.
- Season to taste with adobo, salt, black pepper and pique (hot sauce).
Que Rico!
