Easy Shrimp Ceviche

It’s summertime and this quick easy shrimp ceviche is perfect and refreshing!

This brightly colored shrimp ceviche is so pretty and delicious!

You are going to love the taste of the vinegar from the pique (hot sauce), garlic and lemon.

Serve this meal as a snack, for lunch or dinner!

INGREDIENTS: 

  •    2 pounds of cooked, peeled & deveined shrimp (I use the Kirkland brand from Costco)
  •    4 fresh plum tomatoes, diced
  •    1 purple (red) or white onion, peeled and diced
  •    ½ cup of cilantro, chopped
  •    1 lemon (juice only)
  •    1 tablespoon of garlic paste or minced garlic
  •    Adobo seasoning
  •    Black pepper
  •    Salt
  •    2 tablespoons of Urban Pilon Pique (this hot sauce has a unique vinegar kick!)

INSTRUCTIONS:

  1. Place shrimp in a bowl, rinse and drain.
  2. Once drained, soak the shrimp in cold filtered water and lemon juice for approximately 20 – 30 minutes (the acid from the lemon juice will cook the shrimp and eliminate the fishy taste).
  3. After removing the tails, cut the shrimp into three pieces.
  4. Add the tomatoes, onion, cilantro and garlic.
  5. Season to taste with adobo, salt, black pepper and pique (hot sauce).
