Margarita’s Picadillo

Check out this easy and delicious picadillo recipe that you are going to love. It is versatile and can be served on top of tortillas, salad, rice, and corn chips (the options are endless). This will be one of your favorite staples and a time saver in the kitchen.

Que Rico!

Ingredients:
  • 2 tablespoons olive oil
  • 1 lb. ground beef
  • 1 small onion chopped
  • 1 orange bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 tablespoon garlic
  • 2 tablespoons sofrito
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 1 tablespoon coconut aminos (or Soy Sauce)

Optional, but I love to add the following:

  • 1 can of black beans (without the liquid)
  • 1 can of diced tomatoes (without the liquid)
  • 1 can of corn (without the liquid)
Instructions:
  1. In a large skillet, heat olive oil over medium heat.Add onions, bell peppers, garlic, sofrito, and spices listed above. Saute for about 3-5 minutes.
  2. Add ground beef, crumble, and stir until browned, about 7-10 minutes.
  3. Add drained corn, beans, diced tomatoes, and coconut aminos.
  4. Cover and simmer for 8-10 minutes, stirring occasionally, until meat is nicely cooked.
