Ingredients:
- 2 tablespoons olive oil
- 1 lb. ground beef
- 1 small onion chopped
- 1 orange bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 tablespoon garlic
- 2 tablespoons sofrito
- 2 teaspoons oregano
- 2 teaspoons cumin
- 1 tablespoon coconut aminos (or Soy Sauce)
Optional, but I love to add the following:
- 1 can of black beans (without the liquid)
- 1 can of diced tomatoes (without the liquid)
- 1 can of corn (without the liquid)
Instructions:
- In a large skillet, heat olive oil over medium heat.Add onions, bell peppers, garlic, sofrito, and spices listed above. Saute for about 3-5 minutes.
- Add ground beef, crumble, and stir until browned, about 7-10 minutes.
- Add drained corn, beans, diced tomatoes, and coconut aminos.
- Cover and simmer for 8-10 minutes, stirring occasionally, until meat is nicely cooked.
